Robert's Hearty Ranch Beef Soup

A great beef recipe from RAB, the second generation here at the ranch!

Ingredients
- (1 Can) Diced Tomatoes
- (1 Can) Green Beens (Drained)
- (1 Can) Rotel
- (1 Box) Beef Broth
- (4 Carrots) Peeled Carrots
- (2 Potatoes) Peeled Potatoes
- (1 Stick) Butter
- (1 Package) Beef Shank Soup Bones
Directions
- In a large pot, combine the soup bone meat cubes and beef broth. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer on low for 30 minutes.
- In a separate pot, boil the cut carrots for 20 minutes until they start to soften.
- In another pot, boil the diced potatoes for 12 minutes until they are slightly tender.
- Once the meat has simmered for 30 minutes, add the diced tomatoes, drained green beans, Rotel, boiled carrots, boiled potatoes, and butter to the pot.
- Bring the mixture to a boil, then turn off the heat. Let the soup sit until it cools down.
- When ready to serve, bring the soup back to a boil, then ladle into bowls and enjoy!
