How much beef can I expect from a half beef?
The general rule of thumb is you can expect about 60-65% of your hanging weigh back in box weight beef. This number varies based on how you fill out your cut sheet. Bone in cuts will result in a higher total weight received back. No matter how you fill out your cut sheet, you are not "losing" any beef during the process you are simply re allocating it.
